Rainier Community Kitchen is an opportunity for neighbors to gather to cook good food together and go home with meals for their families. Our combined shopping dollars go to healthy, vegetarian ingredients and we enjoy learning new recipes as we cook together. Currently, we meet at the RCC on the second Thursday of the month, 6:30-8:30pm.
Register by 10am Wednesday, May 11 for the class on May 12. The fee is $25 and you'll enjoy two hours of camaraderie with your neighbors, a sense of accomplishment, and 4-6 servings of 4 menu items to take home.
- Twice-Baked Potatoes: a pleaser for kids of all ages; we'll mash in white beans for added protein and season them with fresh goat cheese for a delicious flavor. You may keep them fresh for up to 4 days or freeze for a month or two before baking them just prior to eating.
- Zucchini-tomato pasta sauce: highlights of orange and basil make this more interesting while still being family-friendly. It's great for any shape pasta and freezes well; you'll take home a package of dry pasta
- Asparagus & spring greens salad: with a light dressing you can take home separately
- Muesli: an uncooked blend of oats and other rolled grains, bran flakes, almonds, and dried fruit and coconut—great with milk, or rice, soy, almond, or coconut milk.
You'll take home 4-6 servings of each of the above items.
Please bring storage containers to carry home your food—glass jars work well for items that are hot when we finish (always soups, and this time the sauce).
An apron and your favorite paring and/or chef's knife are always useful.
We do need a minimum of 4 participants to hold the class, and I need to know by Wednesday, May 11 at 10am (deadline extended for Wikli readers) whether you plan to attend, so I can scale the recipes and do the shopping.
The fee is $25. Register/pay online. You may also pay by cash or check on Thursday night — just be sure to let me know by Wednesday morning if you plan to attend.
